Before checking out a new city, we like to fuel up our foodie tanks prior to hitting the pavement. If we find ourselves in our hometown of Syracuse, New York we’re bound to start the day with a double stuffed Oreo french toast at Modern Malt. In Lausanne, Switzerland you might find us stuffing our faces with a breakfast pancake burger at Pancs. In Bruges, Belgium one of our favorite spots is That’s Toast because of its tasty bread based brekkie dishes.

Bruges is a classical beautiful fairytale style European city. With its scenic canals and quiet cobblestone streets, it’s hard to meander the wrong way, unless you’re a character in Martin McDonagh’s cult classic movie, In Bruges, starring Colin Farrell. Wandering around the picture perfect Flemish city is precisely how we came across That’s Toast.
Before you go, you should know that the all day breakfast bar establishment does not take reservations. All of its tables are first come, first serve …and there’s isn’t much of a waiting area. That being said, if you find yourself in Bruges and in the market for a hearty meal accompanied by quality coffee and freshly made cold pressed juices, That’s Toast is well worth the wait.

We kicked our meal off with the classic which, despite its name, is quite the decadent dish. The classic consists of avocado salsa, a poached egg, green asparagus and is topped off with Grana Padano cheese and mint.

Caffeine was a must and the cappuccinos at That’s Toast all arrived with sweet little waffle cookies set beside them on the saucers. That’s Toast is also flexible when it comes to catering to dietary restrictions. It’s motto could almost be, “No dairy? No gluten? No nuts? No problem!”

We also gave a mythical triple decker tower that is known, for obvious reasons, as the triple madame a whirl. It came with molten old Bruges cheese and serrano ham on toast piled three slices high topped with a fried egg and served with a side of sweet pepper mayonnaise. That gut buster certainly kept us well fed for the rest of the day.

We stuck to the savory toast side of the menu, but That’s Toast also has sweet options like the tostamisu. The tostamisu consists of a sweetened toast made with amaretto, espresso, tonka mascarpone and it gets topped with a flourish of cacao.

Bruges is such an amazing place to visit. On our trip to Belgium, due to restricted time, we had to choose between Bruges and Ghent and decided to go with Bruges and absolutely loved every minute of it 😀 thanks for sharing and safe travels 😀 Aiva
